Chillies are a remarkably varied group of plants that have been grown, exchanged and adapted across different parts of the world for hundreds of years. The five primary cultivated species each have their own distinctive flavours, leaf forms, flower characteristics and cultural backgrounds.

To make it easier to select suitable chilli varieties for growing, here is an overview of the five major chilli species and what makes each one special.

1. Capsicum Annuum

Capsicum annuum is the most widely cultivated chilli species and includes a huge range of peppers, from sweet bell peppers to intensely hot cayenne varieties.

Taste: Flavours vary greatly depending on the cultivar, ranging from mild and sweet to sharp, spicy and pungent.

Flower and leaf shape: The flowers are generally white with five petals. The leaves are broad, green and oval-shaped, narrowing slightly toward the tip.

Colours: The fruits can appear in many colours, including green, red, yellow, orange and purple.

Origin and spread: This species originated in Central and South America and later became popular worldwide. Spanish and Portuguese explorers helped introduce it to new regions during their overseas voyages, allowing it to become an essential ingredient in many cuisines.

Interesting fact: Although the name “annuum” implies an annual plant, many Capsicum annuum varieties can survive for several years when grown in warm climates.

2. Capsicum Frutescens

Capsicum frutescens is recognised for producing small but extremely spicy fruits, including the well-known Tabasco chilli.

Taste: These chillies are usually very hot, delivering a strong and intense spicy flavour.

Flower and leaf shape: The flowers are usually white or pale green with occasional purple colouring. Compared with Capsicum annuum, the leaves are smaller and narrower.

Colours: Fruits commonly mature from green to red, though some varieties may also produce yellow or orange peppers.

Origin and spread: Native to the Amazon region, Capsicum frutescens spread through the Caribbean and Africa through European trade and exploration. Today, it remains an important ingredient in many African and Southeast Asian recipes.

Interesting fact: Tabasco peppers are used to make the famous Tabasco sauce, which gains its unique flavour through a special fermentation process.

3. Capsicum Chinense

Capsicum chinense contains some of the hottest chilli varieties in existence, including habaneros and the famous Carolina Reaper.

Taste: These chillies are known for their powerful heat combined with fruity, tropical or floral flavours.

Flower and leaf shape: Flowers are usually white or greenish-white. The leaves are broad, glossy and often darker green compared with other chilli species.

Colours: The fruits come in a wide range of shades, including green, yellow, orange, red and chocolate brown.

Origin and spread: Despite its name suggesting a connection to China, Capsicum chinense actually originated in the Amazon basin. It later became widely established in Caribbean cooking traditions.

Interesting fact: The Carolina Reaper, a variety of Capsicum chinense, has held the Guinness World Record as one of the hottest chillies in the world.

4. Capsicum Baccatum

Capsicum baccatum includes varieties such as aji peppers, which are valued for their unique taste and moderate level of heat.

Taste: These peppers often have a sweet, fruity flavour with different degrees of spiciness depending on the variety.

Flower and leaf shape: The flowers are usually white with noticeable yellow or green markings. The leaves are large, green and oval-shaped.

Colours: The fruits may develop into green, yellow, orange or red colours as they mature.

Origin and spread: This species comes from South America, especially Peru and Bolivia, where it remains an important part of traditional cuisine.

Interesting fact: Aji peppers are key ingredients in classic Peruvian dishes such as aji de gallina and ceviche.

5. Capsicum Pubescens

Capsicum pubescens is the rarest of the five cultivated chilli species and is best known for the rocoto pepper.

Taste: Rocoto peppers are usually very spicy while also offering a distinctive fruity flavour.

Flower and leaf shape: The flowers are purple, and the leaves have a soft, hairy texture, which explains the species name “pubescens.”

Colours: The fruits are commonly red, orange or yellow and contain unusual black seeds.

Origin and spread: This species originated in the Andes Mountains, particularly in Bolivia and Peru. Although it has not spread as widely as some other chillies, it remains highly valued in Andean cooking.

Interesting fact: Rocoto peppers are among the oldest domesticated chilli varieties, with archaeological evidence showing they were cultivated as early as 6000 BC.

Choosing the Right Chilli Variety for Your Garden

Growing different chilli species at home brings more than just heat and flavour to your garden. It also connects you with centuries of agricultural history and culinary traditions from around the world.

Each chilli type offers something different, from the extreme heat of Capsicum chinense to the fruity sweetness of Capsicum baccatum. Understanding the differences between these species can help you select varieties that suit your growing conditions and cooking preferences while avoiding an unexpectedly fiery surprise.
